There is multiple factors so I will list 3 big ones
only
1) Genshin is a game that have both male and female characters., It don't have real romance between playable characters. There is some 'fanservice' 'bait' put there intentionally by the Devs but never something tangible but something that is enough too turn the public imagination on.
2) Genshin Is played by both men and woman and here is were a bit of how the real world works influence into the game, the woman that play the game want the guys for themselves, they guys want the girls for themselves.
3) Genshin have a big general 'normie' public, that General public normally don't self insert in the protagonists, but they still 'love' some characters, and they know that these characters aren't real and they will never be able to together with them, in their minds better that if the possibility of the character they like having a romance in that universe the one that would not make them that jealous or averse to it would... pairing the character they like with other character they like of the same sex. why? people of the same sex can't reproduce and in lesbians case two girls making out is seen as an erotic scene without consequences by the majority of the guys, in girls case they only think like that about fictional men.
So normal people even the ones against the LGTV people will rather subconscious be more positive toward two fictional characters of the same sex being portrayed together than having them with someone of the opposite sex.

That is how people that don't self insert but are infatuated enough with these fictional characters do more than just watch the story work.
