Rise of Flight was and is admirable in its premise and it's gameplay. A WWI air warfare simulator that goes to great lengths to depict the rapid evolution of aircraft and weaponry from guys firing rifles at other planes from the cockpit to machine guns syncopated with the prop revs.

And let's not forget Ilyushin2 Sturmovik in all it's permutations. 1946 is really nice since you get to test out all the German wunderwaffen.

I also notice that sims are ignored for the most part but let's not forget

Mudrunner which even though it's somewhat primitive has the most epic mud of all the series which was inspired by Siberian truckers driving in flowing river beds completely submerged.

Also Asietto Corsa Competitizione IF you're enough of a fanatic hobby fanatic to buy all the expensive brake gas and clutch gear with a steering system that can practically break your wrist.

Jimmy Broadbent got divorced at 30; penniless, jobless in depressed England he moved into his parents garage, blazing hot in summer freezing cold in winter. He wound up online racing with real F1 drivers and wound up getting a real race car team to bet on his sim skills in the real world. He won the 2022 Britcar Trophy Championship driving for the Praga R1 UK team.
In the process he proved that racing sims were a valid tool for race training.
