Grimm, as we know him in BS1 and BS2, is Mary Sue's creation, made up from the souls of a bunch of different mindbroken authors stuffed into an immortal vessel. That in no way means that he's somehow stuck in the realm of dreams. I'm not sure where you got that idea from, the game constantly treats it as you returning to reality, where you belong, not just going there for the first time. You see Grimm waking up on his bed in G for a good reason, he's been sleeping the entire time in reality on that very bed. You've also got the incomplete fairy tales on the book shelf there to indicate that this is the home of an author, not some random ass house. Victoria even leaves you a letter next to the bed saying she'll see you again too.
