Because it's not phrased retarded. The Shadow of Ezra states that it's made from carbon. The chef who quotes Ezra explains how these demons use oxygen and hydrogen to manipulate the carbon and create synthetic fat, although he is partly wrong. They don't use oxygen they use carbon dioxide.
So carbon, I'm assuming is in some sort of graphite form, is heated up with carbon dioxide and oxygen until it oxidizes and forms a wax substance that they then add water and natural flavors to and tell you its just as good as butter.
