there's thousands of new TR levels made by the community with pretty decent graphics and the concept still works
some of the levels are widely considered to even be better than the originals, like the sabatu levels

i get what you're saying though, but you have to remember that the original TR uses the grid system because that was the only way the developers could make the climbing system actually work
that constraint doesn't exist anymore and there's a multitude of different ways to create a climbing system now which can arguably be much more challenging to master by its higher possible complexity
as for the geometric and surreal nature, yeah, that's where modern games kind of fall flat but i suppose to achieve it, "modern graphics" would just mean a highly stylised but high-resolution graphical style instead of just a generic photorealistic graphical style

i see no reason why it can't be done, assuming the people who can make it possible exist
