For several reasons: first, I don't like them very much, they have a strange taste, they're not crunchy, and the and the canned and milanesas versions here taste bad...
And second, when I was a kid, when I played Adventure Island, eggplants were the bad item, and on top of that, I didn't like them, so that happened XP.
So I never acquired a taste for them, I just don't eat then XP
