You clearly know nothing about Monster Hunter, at least past the first gen most designs are very creative with multiple concepts and inspirations. It even has its own "jobmons". Anjanath for example is a fusion of multiple paleoart concepts where at first it appears like a very realistic theropod only to then reveal much more fantastical looking fins and a nose crest in its enraged state in reference to soft tissue speculation common in modern paleoart. The cloak of feathers along its back also bring to mind a barbarian warrior wearing a fur cloak which matches with its brutish fighting style and this barbarian theme is further reinforced by its armour set. Finally, instead of just a generic fire breath it sneezes flaming mucous out of its nose which gives an actual function to its nasal crest and the sound design of hearing this giant dinosaur violently sneeze is just incredible.

Monster Hunter designs have just as much thought and care put into them as Pokemon does, if not more in many cases.
