You shouldn't waste gems on finishing fucking Olive Cookie, only time to use gems is to reset legendary beastcuits. Other than that then convenience for certain magic candies and maxing out your cookie houses for fast max levelling for all your cookies - as of this update that's 90 for now. Also, the monthly-ish updates that provide crystals for unique currency, like the hot new super epic or higher rarity cookies - kingdom is generally generous compared to the other cookie games
