Base recipe is really simple, I even did it with my 5 year old.
Dough (enough for 2):
> About half cup room temp milk with a little sugar in it and yeast (in a normal coffee cup and using dry yeast it should be enough to just cover the surface).
>About 2.5-3 dl wheat flour (more on this below)
>little bit of salt
Filling:
> 1 haloumi (~150 gram)
> About the same Gouda
> About the same with low moisture mozzarella
> 1 egg
Knead the dough for 5 minutes after mixing. Only add enough flour so that it isn't sticky, it shouldn't be a hard dough. Like silicone breasts or a nice butt in firmness.
Let rest for 90-120 minutes in the form of a dough ball with a light touch of olive oil (or avocado oil) under breathing cover (like a moist blanket).
Grate the cheeses and mix with eggs.
Cut dough in two, flatten it and make the outer rim thinner.
Add the cheese in the middle and close the package (don't over use flour).
Put in dry pan at medium heat under a lid, flip over when the sides start to firm up and the bottom gets brown.
On the last flip you can put butter on top.
To increase the sensation of saltiness you can brush the top and bottom after the first flip with salt water.
