It's difficult to say, I mean we know that she specifically had anorexia and this was just an extension of that. My sister did that when she went through her anorexia phase. She claimed to be vegan so that she could say no ice cream, no sprinkles, etc. because gelatin isn't vegan and she'd go through a lot of other loopholes too on the packaging and sometimes would even say that they couldn't prove they didn't use animal testing and therefore she couldn't count in his vegan. It was just a lot of excuses to avoid food, not that she actually cared about those things. Hence, now that she's not anorexic, she is not a vegan. She doesn't care about that shit for real. Although you can also have the opposite case where it starts as really wanting to make sure that you're health conscious and you're eating the right stuff. But eventually that spirals because they end up with so many concerns like their diet being so restricted, they just can't get enough calories. Or they start to look at the calories too and say that there must be a perfect number of calories to achieve therefore they must be under that number.
