"Humans" are called "apes" in Sonic Union since they're just another type of Mobian.
There are going to be real humans in Shadow Cross, so there's a need to differentiate between the two.
There's a Mobius with Mobians and a Terra with Humans.
Sonic Union takes place on Mobius. Shadow Cross takes place on Terra.
Humans and Mobian Apes are visually distinct because Mobian Apes can have more cartoonish features and proportions than humans. Mobian Apes side by side with Terra humans look like say, Jessica Rabbit compared to a human male.

That's intentional. It's meant to be a redesign heavily based on the Uekawa look in the same vein that Uekawa's look was an evolution of Classic. I might get art like that at some point but I'm unsure if any artist would be interested, it's hard to find affordable artists to commission.

There's more to Tails than being a "kid brother sidekick". Tails in the games has been more than that for awhile. Tails is Sonic's best friend and partner who can fly with his two tails, fix planes, and helps Sonic navigate the planet. Patty still fulfills that role.

It is a merging of canons. It takes numerous ideas from different continuities and recontextualizes them. Even Tails being a female was canon in some regions, such as the spanish dub of AoSTH. Union takes elements from existing continuity and remixes them into something new but hopefully recognizable and appealing to Sonic fans

If it doesn't appeal to you because it's not canon, that's fine. It's not supposed to appeal to people who are canon purists. It's supposed to appeal to people who are open minded to new interpretations of Sonic that pay respect to the source material. If that's not you, then you aren't the target audience.
