You are missing the big picture. Yes, why should anyone accept one designated writer's ending over anyone else's if it's not George's? Would the publisher try to shove it down the audience's throat or not? Doesn't matter. What matters is that since A Dream of Spring(by George himself) is impossible, the best he could hope for, following his own personal philosophy, is his story and world be used by new, numerous authors in the decades and centuries to come and NONE of these new adaptations will be canon in the same way there's no canon for King Arthur's legends in traditional sense.
