Incognito is a privacy tool for hiding your porn history from your parents or family that also use that computer. It's relatively worthless at preventing yourself from being tracked, and will also not prevent your search history from sites that you log in to like youtube.
I mostly use it for banking, as it prevents log-ins and other cookies that you make in incognito mode from lasting beyond closing the window. If you own your computer and nobody else uses it and can password lock it so the other members of your household can't access it without your consent, it's not useful for hiding your smut usage. And it's not going to help against tracking, data gathering or legal repercussions.
VPN's are what you need to actually hide your activity. And I believe the FBI or some other three-letter-agency recommends that you use one for your own safety. However ultimately a VPN is probably just selling your net data to an aggregate reseller.
