There was one time My player attacked a bad guy in a tavern and hit, and I described it as her catching his fist just before his bladed gauntlet could actually pierce her. She still took the full damage, I just thought it made a nice picture.
You can describe arrows landing in shields, short jerking twitch-like reflexes and movements that narrowly avoid having a limb severed, blades clanking off armour, so on.
