I'm no expert, but for me the important thing(s) are the animation speeds and also that your job combinations give 3 Swiftness. Stats are a thing as well but I don't give a fuck about those. At least, that's how I did it last time I played Zodiac Age, and I spent a retarded amount of time cutting out pieces of paper with each thing a job adds and then combing them all, etc.
My non-expert opinion:
>Shikari/WHM is OP, Penelo has a good Ninja sword animation but a bad dagger animation
Consider Balthier if you want to be optimal, since you might be using Main Gauche mostly as this job combo, as Balthier has the best animation for both dagger and ninja sword (and katana and 1h sword)
>Monk/Bushi very good, Vaan has good Katana animation but not the best, meh polearm
Maybe consider Fran, since she has the best pole animation and her other animations are not that good, maybe consider pairing Monk with something else if you put it on Fran, since the Katanas wont be wasted, but would be better used on a different character. If you switch Monk to Fran, something like Monk BLM could be good
>Archer/Black Mage, Fran has the worst bow animation
Archer/RDM is probably better, for Ardor + Burning Bow + Oil combination, this would also free up BLM for Monk, if you wanted to go that route. Fran starts with a Bow but she's one of the only characters that has a delayed bow animation (0.2 seconds)
>Uhlan/RDM, Ashe has a meh spear animation
Uhlan really just needs another Swiftness, you don't need it to cast a bunch of stuff, so you could do Time mage for Swiftness and a less busy mage
Character limit. Really, the animation stuff is whatever. Just try to make sure you have 3 Swiftness for each job. Your Uhlan/RDM only has 2, but even that's not the end of the world. Just have fun.
