After adding your grated clove of garlic for like a minute, add your pork meat and cook it until all sides are grayish, that's why you don't want your onions to be completely caramelized, they'll continue cooking with the pork. Add your seasoning (cumin, coriander, cardamom) midway (when you stir the pork and see gray and pink, add it).
Once you see that all sides of the cubes of the pork are cooked, add water (thankfully my pot is big enough), a bouillon cube (meat or vegetable is preferred) and a big bay leaf (or two small ones). Let it simmer in medium low heat, with the pot covered, for an hour.
