You need a lens to actually see the water's edge.

You are familiar with vanishing point perspective - the hotel hallway converging to the center or the light poles that appear to shrink. It is the same with a picture that all converges to the center, so the water and the land get squished together.

The picture shows how easy it is to prove there is no curve. The picrel is what it should look like if there was a curve. But, it looks odd and not like any city view you have ever witnessed.
