I've always been partial to Revolver, Sgt Pepper, and the White Album. The Abbey Road medley is really nice too. Unfortunately, some of their best songs were released exclusively as singles like Paperback Writer/Rain from the Revolver sessions. It's also worth checking out the mono mixes since the 60s stereo panning didn't always work (like when vocals and drums are hard-panned to the left/right).

John's first solo album with Ringo is on-par with their late-60s output. Paul is probably my favorite Beatle but if you listen to his solo album from the same year (1970) it's like night & day in terms of quality. You have to give him props for recording the entire thing by himself though.
