Elves are always the second most picked race right behind humans. Your logic doesn't work when it's only girls that play elves (which is wrong, anyway) and they barely play anything.
If you want to throw disingenuous arguments around: humans are only picked because most people are suffering from aphantasia, and need to self-insert to enjoy fiction. They are also intimidated by RPG systems and mechanics, and humans are presented as the barebones dumb choice for dummies.
