If China came to the defense of Iran unfortunately most of the world that isn't America / Western Europe would see them as defending the underdog against the forces that preemptively attacked it for notional WMDs that aren't even claimed to exist yet. China launching WWIII by taking advantage of potentially the one situation where they could come across as "the good guys" isn't entirely outside the realm of possibility.
