pretty sure the actual reason is because game developers don't know how to create assets these days, they just use photogrammetry and/or pick assets up off the epic games / unity store, then animate them with mocap
this works fine for making a standard IRL realism consoleslop game, but you can't make anything as bespoke as a game about microbes without having an actual art team prepared to sit down and study a bunch of unfamiliar structures for weeks or months then recreate them digitally
