You're half right.
Micro$lop is advertising it as that, after they bought it.
They've seen fit to let us keep modding the hell out of it, though, in addition to charging children who don't understand the value of a dollar > MS Points > Minecraft Store Coins (or whatever) to put cute little flowers on their heads.
Mods are great on their own, you can put in a few that sound nice and even config some to work together. But the real rabbit hole is in getting into modpacks with questlines and the like. Some recent standouts are Oceanblock 2, ATM To The Skies 9/10 and FTB Skies 2.
Blightfall in particular is a bit older but still (infrequently) updated to maintain a pseudo parity with a lot of the QoL invented since then- It's a standout 10/10 in terms of narrative progression and mechanics. (I personally also enjoyed FTB Arcanum Institute greatly)
You can fiddle together some real neato 'tism factories in most of those, primarily using Mekanism, EnderIO and... RFtools? OriTech is a bit new, but very cool. Grinding ores and processing metals into alloys and using conveyor belts and blast furnaces to automate farms and build your way up to laser transmission systems, energy-matter storage and QuAnTuM bullshit (harness a blackhole for power, 100% safe!!).
If you really want to get more into the nitty gritty soul suffering crunch of pseudo-engineering, there's things like Gregtech et al; I'll let anon speak more on that, I can't stand prospecting for ores with a ratty stick and prospecting slurries of actual real world minerals into low quality pig iron (Sevtech Ages was like flattening my penis with a ballpeen hammer, the Dark Age and fighting shadowbeasts and shoggoths was the gayest fucking thing) but it really turns on some hoe-scaring motherfuckers.
Not me though. I don't scare the hoes. I just play roguelikes. Which are COOL.
