It's a bug in ZaZ animation pack, which for some asinine reason excludes a ragdoll event from rabbit and chicken races. There's a fix on Nexus (but you can do it yourself by loading zaz's esm file in xEdit and either adding a ragdoll property or removing the entry from zaz's esm):
