Okay, you won't like this answer but:
To consistently change body proportions outside of the Checkpoints and LoRAs, you'd have to use Scribble controlnet nodes.
I have it setup with Krita, so I can just draw a simple stick figure and the AI will forcibly generate the person LoRA onto it, depending the percentage value.
