So far I've used the stitching feature in ImageJ (Fiji). Capturing each individual frame usually isn't necessary, for the above I only took 3 screenshots. I've also done it manually in Gimp, but it's more tedious.
Though that approach kinda doesn't work well for diagonal pans, pic related.
