I think it was a mixed bag personally. The Tour ones were all underwhelming outside of Berlin Byways for the awesome OST (https://youtu.be/7F9EOi0dzGg) and I guess that one nighttime city one, most of the new OC stages were solid even if the sweets one is kind of visually a mess, and a decent amount of the returning stages had fairly solid reworks.

I just went back to MK8D to play through the DLC I bought years ago since I got a Switch 2 and finally get the golden tires since I was constantly putting the time trials off. Many of the original 8D stages were okay but nothing spectacular either, and many of them were genuine snoozefests after the DLC. So many of the DLC courses required you to constantly be drifting and boosting, using gimmicks like the water to speed you up, and use a bunch of alternate paths whereas a decent chunk of the original 8D stages mainly just give you a shortcut if you have a mushroom on you.
