Yeah, potato chips in the bagged style have to be very thin to get the water out. You're basically dehydrating them using oil. The oil can be cleaned and reused, and is probably the biggest headache of making any fried foods. Basically, you have to decide you're going to be frying your meals that week, else imo it's just a goopy unwieldly mess. One thing to note, fried veggies, if the water is out of them, will store for a very long time, and can be reconstituted to a slightly mushy version with water, much like air-drying. the heat does alter the vits and mins, but for simple flavoring differences, if you don't have a way to air-dry, but can fry, it's an option for longer storage.
