Steel and tea really don't mix well. Especially evident with the black teas you mentioned. You can filter through it or stir with metal teaspoon but don't brew in it. Also don't be afraid of the foodsafe plastics like some blogger mom from 2024.

Exiting Plato's cave moment, for sure. Ditch the infuser altogether. It's like a coitus interruptus for the tea. Brew a very hot pot of tea like a big boy. Refill with boiled water few times. Whole day on a breeze. Mhmmm.
