>Ingredients
2 lbs ground beef (or do half beef and/or half pork for richness)
2 tbsp olive oil
1 large onion, diced
4 minced cloves garlic, minced
2 fresh jalapeños, chopped (remove seeds for less heat)
1 red bell pepper, diced ofc
1 can (28 oz) of crushed tomatoes
2 tbsp tomato paste
2 cans (15 oz each) kidney beans, rinsed and drained
1 can (15 oz) black beans, rinsed
1 cup beef broth (or beer for extra depth)
1 tbsp cocoa powder (this actually adds richness without tasting like chocolate)
2 tbsp Worcestershire sauce (I like to add a little more)
2 tbsp apple cider vinegar
1 tbsp brown sugar (balances the acidity, and I've also added a baby spoon of plain yogurt or sour cream)
>Spices (mix these before adding!)
2 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1 tsp coriander
1/2 tsp cinnamon (this gives it a subtle warmth, but if you add this, I advise you don't skimp on the spice)
1/2 tsp cayenne pepper (adjust to taste)
1 tsp salt (I get weird and use pink himalayan salt)
1/2 tsp black pepper (or do black peppercorns and crush them yourself)

Heat oil in a large pot, sauté onions until golden. Add garlic, peppers, and jalapeños, then cook 3-4 minutes. Add your ground meat, breaking it up until browned. Stir in the spices (again, mix them together before adding) and toast for 1 minute. Mix in tomato paste, then add crushed tomatoes, beans, broth/beer, Worcestershire, vinegar, cocoa powder, and sugar. Bring to a boil, reduce to low, and simmer for at least an hour (or all day to taste better!) and stir occasionally. Adjust seasoning-- add more salt, vinegar, or chili powder if needed. Toss in a square of really dark chocolate at the end for silkiness. Garnish with lime juice and cilantro right before serving.
