Should I be killing all the mobs in a dungeon? I don't wanna miss anything but I also don't wanna over-level either.

Pretty much any JRPG. Romancing SaGa 2 remake and Trials of Mana remake, as well as the Octopath games to give some examples. I'll also be getting Elden Ring on Switch 2.
For a non-JRPG example, musous such as One Piece Pirate Warriors 3 and the Co-Op action game Marvel Ultimate Alliance 3 are both great.
