Wrong, we never see from her perspective what she was thinking during that moment.

It's framed that way on purpose. Claudia mentions that everybody sees her as the Silent Witch as being cool, calm, and collected when every single time she's been seen in public, it's her losing her spaghetti. It's everyone else that has the wrong idea about who she is. We have no reason to think the dragon extermination wasn't her behaving the same as every other time we've seen her under pressure so far; nervous, anxious, lost in numbers.
