I guess that's valid. We had a story arc not too long ago about a demon wanting to coexist with humans without understanding feelings like guilt or malice. It would seem that because they know how to say the correct things they'd understand these things. But, I propose it isn't because they understand them, it because they understand their utility for demons. An actual human could feel guilt and shame and declare to never do it again and actually not, driven by those feelings, but a demon doesn't have those feelings. Similar to how humans without truly understanding the wind or waves took to the sea and voyaged as Solitair described it.
That or just a little suspension of disbelief because the demons work as a metaphor for the most wicked of people.
