theres an ash of war called vow of the indomitable that you can slap on ANY shield
you can offhand the lightest shield you have and just switch to it when you see her float in the air
it has enough iframes to avoid the first slash and then you can easily just roll out of the other two
you can also just block the first slash and roll the other two but this will have her regen a bit of hp
another thing you can do is bring frost pots and throw them at her when she floats, her frost res is shit and 1 pot is enough to frostproc her out of it but do keep in mind that her res will go up the more you do it so it might start taking two pots after a couple of times (this is on ng she has more res on + cycles)
another thing you can do is throw shit at her when you feel like shes gonna do it
her ai is kinda whack on her phase1
she will do it at likr 70% and 30% so you can run away and throw shit at her to trigger it while shes far away and it completely misses you

you can also just like, raw dodge it but personally i could never be 10/10 consistent at it
but it IS and option
