I can personally discriminate between MP3, 16-bit flac, 24-bit flac, 44.1kHz and 96kHz when given random samples.

The jump from mp3 to 16-bit flac is insane on any track. The difference between 16-bit and 24-bit is the most significant in electronic music, especially goa trance, psydub, nu-disco and deep house. Some tracks have so many different instruments weaving through one another, or working together, in 24-bit you can hear more different individual instruments at the same time. It's like having a recipe and instead of the food having a unified flavour where you can recognize hints of, say, cumin, paprika, chili, cayenne and coriander, you can taste every individual spice to their fullest extent. The flavours don't get in each other's way, they complement one another, in essence the overall flavour is the same as the recipe would taste like otherwise, except you can taste the individual flavours of the spices in addition to the whole thing, which makes the experience much richer.

Also sometimes lets you hear more clearly what the artist is doing with their music, you can hear melodies begin to build up very subtly in the music, maybe like a minute earlier than you would first hear it in 16-bit format.
