I brown the meat and spices. Then I pull the meat, sear the chilis (and alliums, if I use them) in the residual fat. Then I pull that, use a splash of wine or brandy for the fond. Then I add it all together with some bone broth to a low simmer. If I add beans I do so at this point. Once everything has cooked down a bit I add the cocoa or coffee. Toward the end I add the alcohol to blend the flavors. The process takes about 5-6 hours on super low in a dutch oven. I either use bison or lamb for my meat where possible.
