Only a fraction can fit here, there's a lot more I could say.
Overworld lighting during the daytime is just awful. Unreal Engine 4 has many, many visual shortcomings that make the game look straight up "bad" way too often. Whether it's terrible TAA and ghosting on the PS5 version or it's the lack of scale to the draw distance in the massive environment causing insane levels of pop in and very low quality shadow draw distance.....lots of visual shortcomings really keeps the artstyle from flourishing the way that it should.
Consistency and quality of NPC character models is downright atrocious. VII Remake had better, more varied NPCs that were in line with their environment of the slums of Midgar and the top plate. They had a mid century aesthetic to them as well, with most of them being somewhat retro in their style. Not so in Rebirth. Everyone in Rebirth is a trendy modern day yuppy. There are gay negroes everywhere in the backgrounds of towns, there are copy pasted generic race swapped NPCs everywhere. There are legitimate cases of NPC's who have had their heads swapped to be Black while their hands and body remains White. Some sort of DEI imperative forcing them to have 50% representation in every single area of the game. It's extremely jarring to see Black people with WHITE hands.
The game is perhaps "too developed" much like Remake was before it. You could cut at least 25% of the game out of the game and it would be better off for it. I enjoy variety of interactivity, but sometimes there's just too fucking much overdesigned shit. Chocobo catching is bad, and downright agony on a second playthrough. It's like a dedication to maximalist "game design" that puts a new mechanic in all the time when it's not necessary at all. So many things could have been straight up cutscenes or repackaged or taken out entirely, like the tower/lifespring/summon crystal and Chadley intel spam.
