Realistically, what sort of masteries are we going to get for the skimmer? Maybe some sort of underwater dash?

It's been like 3 months already and I haven't touched another game in that time. Didn't think I'd ever reach a point like this, not that I'm complaining, it's fun here.

I'm playing for the first time, vanilla. Are horses just shit? I bought mine near Whiterun but so far i have buyer's remorse.
Also, how do i make sense of all the bazillion quests i picked up? Do you keep all of them active at the same time, or only the main ones/ones you care about?
Lastly, where do i learn Illusion spells?
