It's different, in Sekiro parry is instant instead of having an animation before you get parry frames but if you spam it multiple times in a second the game takes away your iframes.
Also the whole game is balanced around a single weapon so they could focus on making it ad feelgood as possible instead of going the souls way and chucking a bunch of options at you and asking to figure out how to cheese the boss.
Also people like it because it's an actual story instead of finding a bunch of notes about events you'll never see.
