Like many people pointed out here, there are men alive today who did this to V1 rockets in WWII. But that only worked because, to make the V1 drop, they just had to tip it far enough that the gyro couldn't recover. Modern missiles are much more sophisticated, so flipping it wouldn't help much, I think.

A modern cruise missile is fast and has little fly time, so intercepting one with a plane is just very unlikely.
