Make great paladins. Which seals the racial profile on why most paladins are humans. Also make great sorcerers. Not typically able to make great wizards due to their life span, but have shown a propensity for capturing magic out of sheer force. Or perhaps stubbornness. Which pisses elves off to no end. There's a strained relationship between human magic users and the typical wizard, as such.

Humans have the combination of recklessness and desperation to take the path of the sorcerer more eagerly. Longer lived races don't need to gamble with the danger nor limit themselves the way sorcerers can be.
