I did all that bwo, but yeah my main issue is it comes out a bit too dry every time, should probably add more pasta water next time, and yeah keep the eggs in there for a shorter while, usually I lift it off the heat and then add the eggs and mix etc but I don't want em looking completely raw so I probably keep em in there too long, its the hardest part 4sure, usually turns out tasting p good though
i can't afford guanciale tho, just use thick cut bacon
