I don't think it was ever established that souls and consciousness were ever the same thing.
Not only that, but I thought souls were only necessary to reincarnate and come back to life, otherwise you just stay dead for good and go to the afterlife like some others characters do.

Speaking of which, it boggles my mind that souls are necessary to level up and gain power. Who ever came up with the idea that souls have power?
Even more mind-blowing is that the Slime series actually establishes the fact that power comes from magicules not souls.
