I don't think D&D has particularly good rules for mounted combat (is there a better game for that?)
But the idea of each of us riding a different animal is certainly interesting, and I enjoy comparing statblocks for different horse breeds, bulls, asses, etc. And a party where we each have a different animal companion has its appeals.
No flying steds though, they create way too many easy solutions. MAYBE just the brownie can have one. MAYBE.

Its actually the one good thing in pf2e, authough its hard to be worse than 5e's mounts

I'm not super experienced in systems that simulate mounts well but I played a lot of Pathfinder 1e and you could make mounted combat good in it if you're autistic, I played a classic lance cavalier on a horse for x4 damage (oneshots everything on flat terrain), a gryphon rider (that I had to scour good feats for because you could get a flying gryphon mount in 3 different ways 2 of which were shitty and I don't remember which ones) and an archer paladin guy who only occasionally mounted and did the whole Mongolian archer thing. It's PF1e so it's clunky as fuck but it's doable and fun if you're into build autism, not for everyone obviously.

So, I enjoy RPG design and higher crunch RPGs. The first thing to ask is: is the mount being used in combat or is the mount for the purposes of travel?
If it's for travel, no big deal. Nearly every RPG has fine rules.
If it's for combat and you are at all trying for any sort of realism you need to understand that Cavalry is treated a whole lot like Tanks are treated today. Namely, until we had automatic weapons, Cavalry had a decisive role on the battlefield because there is an inherent advantage to being on a 1,000 pound Destrier (war horse). If you charge by and swing a weapon, the velocity of the horse will impart incredible force to any cut. If you are able to brace a lance, this is orders of magnitude more force and easily capable of impaling even plated foes. And horse archers? The most dangerous army in history, arguably, were Mongolians. There was no answer to high volumes of horse archery in the medieval and early premodern eras.

Systems that do horse combat well include: GURPS, Mythras (and Runequest 6e), Harnmaster, and Riddle of Steel (Song of Swords is also good). I haven't played The One Ring but their rohan supplement is supposed to be good.
The "balance" tends to come with the expense and tedium of keeping your mount safe, alive, and the extensive training required to be good on horseback.

TLDR: if you want GOOD mount rules you have to accept the "balance" is going to be fucked when it comes to combat.

Mounted combat is hardly used outside of large scale battles or exhibitions. The primary benefit of animals is logistics and labor.

Not really. Flying steeds don't do anything you can't do by just buying Flight, and that power isn't broken in the least.

If this is the case, your GM is a shit worldbuilder. In a world with flying creatures used as mounts, the world would change around that.
