Depends. A mindless uncontrolled chicken just doing its own thing isn't much of a threat. But if that chicken's brutal impulses were being controlled by, say, some kind of rider...a jockey of sorts...then I think there'd be major problems for the party.

Roosters are well known for their aggressive behavior, strong beaks, sharps claws and deadly spurs on their feet. It's not unheard for roosters to kill predators attacking their hens and I read about few cases of unlucky people being mauled and killed.
I don't think that it would end with a party wipe, but I can imagine a cheeky rogue getting dissemboweled by Rooster after failed attempt to steal some eggs or chickens.

My sci-fi setting has alien bird people as the most advanced species. Their body type looks similar to Falco (star fox) but with four eyes. Their planet is covered in a spatial-warping field that makes foreign entry impossible, and they outsource war efforts to robot soldiers who have built a small society of their own.
