I unironically do not believe in tips. It's a cancer that needs to be snuffed out. Businesses should just pay employees more, and or employees should seek employment elsewhere, just let it all sink.

The only reason he's eating and sleeping at a tavern is because the pally is footing the bill. He'd be chowing down on wild figs and sleeping under the stars otherwise. No one's ever getting a single pence of tip from him. He's dead fucking broke.

In the setting my group plays in there is no expectation of tips, they are seen as gifts right up there like when a rich nobles tosses coins to the masses or hosts a public feast. That said, my most recent character, Sir Kando, gave the owners and bar wenches of his favorite bar a large gift of nearly 400 silver pieces each (silver based setting) which is roughly 6-8 months of pay each. He did it because it is looking like he may not return from the Drakehaunt Mountains he is about to adventuring in.
