Because all of those decks were going to jump to immediate tier 0 after monored and izzet went down? Zur Domain bulldozed DFT pro tour and Omniscience was 10% of the meta share when Izzet was at its absolute height. And Bounce remained a very competitive deck through both the reign of Cori and the reign of Zur.
Not to mention, all of these cards fucking suck to play against. Bounce forces you to play in topdeck mode because Hopeless Nightmare discards your whole fucking hand while dealing you damage, and Beanstalk completely closes off the entire design space of cards with alternate lower costs because it's that stupidly busted. It was fucking banned in Modern. And the reason they banned Abuelo is in the announcement itself; it's undercosted enchantment reanimation they thought would be balanced because it brings the enchantment back as a weeni, but it turns out Omni doesn't give a fuck. They're perfectly fine with Omni combo, such is why the other enchantment reanimation effects are untouched, but Abuelo was simply too strong of an enabler.

beans can't even be answered by sideboarding enchantment removal since it cantrips and leaves you down a card and they can just slam down another one because it's dirt cheap.
