Are there any wargames designed to accurately simulate the modern warfare of lobbing long-range drones and missiles at your enemy or just blowing them all up from the sky with stealth planes?

I dunno if there's any published ones. Seems more like the realm of ye olde giant hex map strategic kind of game (ala Campaign for North Africa) looking at a whole theater of war, rather than a "Single battle on a relatively small scale" tactical scale we see in stuff like 40k/BattleTech/etc.

I'm sure most modern forces have wargames for these kinds of things, you just probably won't get to play them as a civilian.

next war series sort of. Really any good modern warfare H&C game should have modern weapon systems modeled in some way.

Difficult to do with small scale (6/3mm) miniature wargames because it only really works with hidden information/fog of war and that isn't very common. And modern warfare at the kinds of scales that 15/28mm represent is fundamentally still the same thing. Drones is just another weapon that should be pretty easy to insert. Again the main advantage of almost RTS like situational awareness they can give IRL is difficult to simulate on a board where the players always has that birds eye view to begin with

The small 'grenade droppers' could be easily handwaved in by some adaptation of however light mortars are handled in the ruleset of your choice, I feel. The bigger ones are likely some sort of small helicopter or cruise missile, either of which should, again, be fairly easy to jury-rig from any partway comprehensive 'ultramoderns' set
