There is such thing as over-preparing for a session.

Not if you enjoy prepping.

Anything that has nothing to do with actually playing or anything you won't use is over-prep.

A lot of dorks talk about how prep is pointless because playoids are so unpredictable, but I feel like it's pretty easy to throw chum in the water that they'll respond to. EG if you have a group of goblins ambush the party and one flees they'll want to chase him down like pitbulls on met so he could lead them to the dungeon entrance.

Not as long as you enjoy what you're doing and your notes don't get in the way of the game.
That said you can get away with way less prep than most people assume. Just don't fall into the "no prep" trap. If you're not a seasoned GM, your games will be shit and even if you are, they'll be mid at best.
If you know how to properly prep, there's very little you need to actually do, but the more ressources you put into it the better your game is going to be.

You won't know what you need until you need it.

Everything you need should be in the rules of the game.
