I actually did something like this in a game.

Instead of goblins, the land was being attacked by fey-descended creatures who resembled short humanoid rabbit-ish creatures. They lived in burrows and had a matriarchal structure, with each warhost having a large foul tempered queen. They were pretty desructive and regarded as pests until their burrow got large enough, after which they would form armies and sack towns.

I described them like they were fur-covered goblins but in truth I could only picture them as Max from Sam & Max.

My druid PC actually got their arm ripped off by a rabbit demon a few months ago. They've since grown a magical wooden arm. We were never able to completely eradicate the demon infestation, a few lesser demon rabbits got away and our DM implied that while we stopped the growth for a year or two, the problem will just come back, maybe even worse. The only time our party wasn't able to outright defeat the monster/completely fulfill our contract.

That was literally what the clergy was for. Oh sure, there were no doubt some truly pious types who wanted to go into the service of God. Even today people sign take theology classes, get a Masters of Divinity, enter Seminary, and go through all the steps because they want to be a priest. But back then it was also a viable, non-embarrassing career for middling noble children who weren't in line to inherit anything and showed no talent in the military or elsewhere for that matter. Hans from Frozen? Thirteenth of thirteen sons? He wouldn't have been out trying marry some random princess. He would have had a Roman collar around his neck.

While technically furry, Redwall did this sort of thing really well and is genuinely pretty well-written. Hares become brits, squirrels become scots, badgers become wise giants, moles become dwarves, and things like owls and snakes become large fantastical monsters. Id highly recommend giving the series a read if your looking for low fantasy, medieval conflicts in definitely not england but everyone is an animal instead of a nationality
