Well, mostly, it's because it's pure consumerism isn't it? With video games there's some skill involved or if it's a walking simulator at least you are engaging with a narrative. Anime is popular and most shows have a fanbase you can discuss episodes with. When you buy a $300 super articulated anime figure you pose it and look at it for a few days and then it sits on your shelf gathering dust with the others while you preorder the next figure. Even if you play with your various toys and build little stories with them, nobody else knows or cares what they are because it's just something you made up on your own. And to be honest even if you make an elaborate diorama scene and have really good photography skills, you're still mostly just posing things someone else made around so it's about on the level of a real-life gmod. At least that's my speculation.
